What other fish than catfish could you use? Can't seem to find any catfish over here.

Any "non-oily" fish--NO salmon, fresh/cold water trout, mackeral, herring, etc.

Halibut, cod, something firm fleshed and that doesn't have to be smoked to taste good.

My son went fisihing yetsreday in the big rain we had and came back with some redfish, floundwers and speckled trout. Any of those would be good. He also caught a dozen crabs while fishing. If you have some crabs to add to the gumbo, it will add another dimension to the flavor, and you can savor the gumbo for a couple of days if you have a beard like I do.

I've never put fish in my gumbo but after reading this, I just might give it a try.

Gumbo follow-up. Used Catfish (a first), chorizo instead of andouille, shrimp, scallop, and crab.

Final Verdict: Not alot of talking, alot of smiles and an empty pot!
Mission accomplished. New Years is SAVED!!!

Now I can re-focus on our Super Bowl Run!!! :broccoli:

BTW; I lost my dad this past September, but his gumbo receipe is etched in my brain. We had it this year at Christmas in Biloxi and the family was begging for MORE. I serve the Gumbo to vistors to Dallas and they say it is KICKA$$. Like Emril, I KICK it up a NOTCH. :D

Had 2 big bowls of Gumbo yesterday...

Nice recipes fellas but not one of ya'll added oysters to the list..

I just made a big pot yesterday because it was cold in Big D and I was craving it.
A) It does taste better on the second day.
B) Make plenty of time for the toilet on the third day.
C) I made chicken and andouille gumbo
D) Leave the chicken bones in the gumbo as they add to the flavor
E) Don't use crap andouille. The best andouille on this or any other planet can be found in a little store in LaPlace, LA called Jacob's. You can look them up on their website and they do deliver by mail.
