Desperate for Gumbo. HELP!!!
 
Hey y'all!

I normally wouldn't post here but I'm in a bind.
Its a tradition in my family that my Daddy always made a kickass Seafood Gumbo for the New Year. Well, pop passed away a few years ago, but left me the recipe. My bind is that I lost the recipe!

Hook a brother up with your very best sources and/ or recipes for Gumbo! Do the Bayou proud!!! :crowd:

well here ya go, this should help ya out a lil...you can make the roux however u like, this one is made with flour, but u can use file or whatever. This one doesnt have okra cuz me and the family hate okra, but here we go.....

Every recipe is about taste, so yer gunna have to adjust some of the quantities according to you and make it your own.....

1 onion
couple sticks of celery
couple pods of garlic (be careful with this)
5 catfish filets for stock (adjust for how many people)
1 pound of peeled shrimp
bout a 1/4 quart flour for roux
little bit of green onions
a bell pepper
3/4 pound or so of crab meat
1/4 quart oil
some hot water and some cayenne pepper

Chop all the greens and veggies, and set aside. Simmer catfish filets for bout10-15 mins, then strain with cheesecloth or whatever u got, keep the liquid and chop the catfish into 2 inch cubes. In da gumbo pot, add the flour and oil to make the roux, be careful, dont burn it. On about med high til it looks like peanut butter. Add all seasonings except green onions. Saute for a couple minutes. Add fish stock and catfish cubes. Add hot water, by the ladle, according to the thinkness u prefer. Add the crab and half the shrimp. Simmer for about 30-45 mins, stirring occasionaly. Add rest of shrimp and green onions and cook about 10-15 mins longer. Add salt, pepper and cayenne to taste. And of course throw some rice with it! here ya go, hope it helps and comes out alright.....

wow.. you guys use recipes to cook gumbo... dude... just throw all ya stuff in ya pot after makin the roux and your good to go...

heres another tip... I always make gumbo the day before im going to eat it b/c its always better the 2nd day ;)

Tip: Don't add your onions, peppers until the last 30 minutes of cooking, this way they won't lose they're flavor from over cooking them, add a few pieces of smoked meat along with chicken, I love adding smoked turkey wings, gives you a lot of extra flavor.
When we cook gumbo we cook enough to freeze so we have an easy meal the next time we're hungry for gumbo..
Sometimes I add a small pack of dried shrimp to give it a little kick..
Well, I guess I get a pot of gumbo going now, all of a sudden I'm in the mood for some..

Add more Shrimps.....you can never have too much shrimps. I lived in CT for 2 years way back when and used lobster because it was cheaper than shrimp.

If you can find it, add andouille sausage to the gumbo. Pan fry it prior to adding it to the gumbo.

What other fish than catfish could you use? Can't seem to find any catfish over here.

Any "non-oily" fish--NO salmon, fresh/cold water trout, mackeral, herring, etc.

Halibut, cod, something firm fleshed and that doesn't have to be smoked to taste good.

My son went fisihing yetsreday in the big rain we had and came back with some redfish, floundwers and speckled trout. Any of those would be good. He also caught a dozen crabs while fishing. If you have some crabs to add to the gumbo, it will add another dimension to the flavor, and you can savor the gumbo for a couple of days if you have a beard like I do.

Gumbo follow-up. Used Catfish (a first), chorizo instead of andouille, shrimp, scallop, and crab.

Final Verdict: Not alot of talking, alot of smiles and an empty pot!
Mission accomplished. New Years is SAVED!!!

Now I can re-focus on our Super Bowl Run!!! :broccoli:

I bet your Dad is smiling upon you and your family...especially for the CAJUN Gumbo. Enjoy, and celebrate 2007.

BTW; I lost my dad this past September, but his gumbo receipe is etched in my brain. We had it this year at Christmas in Biloxi and the family was begging for MORE. I serve the Gumbo to vistors to Dallas and they say it is KICKA$$. Like Emril, I KICK it up a NOTCH. :D

I just made a big pot yesterday because it was cold in Big D and I was craving it.
A) It does taste better on the second day.
B) Make plenty of time for the toilet on the third day.
C) I made chicken and andouille gumbo
D) Leave the chicken bones in the gumbo as they add to the flavor
E) Don't use crap andouille. The best andouille on this or any other planet can be found in a little store in LaPlace, LA called Jacob's. You can look them up on their website and they do deliver by mail.
