Because Payton lied to him and hurt his feelings in the process.

Gruden could win you a Super Bowl, he couldn't build a team but he could coach one.

But he won't leave his lifetime gig, its the best job in sports broadcasting and he'll never have to face a question like why he pulled his rookie quarterback from the six yard line with five seconds or so left, to kick a field goal and only lose 3-20 to the Steelers instead of 0-20, an occurrence which had never been done in the NFL since the 1930's when a team kicked to go from 0-3 to 3-3 and a tie.

Yes, we in Tampa remember Gruden, he was a decent coach who didn't hire good assistants and who had an abyssmal general manager for talent procurement. Though he might be the perfect band-aid, we'll never forget our Lombardi, tread lightly at the thought of actually hiring him.

Gruden loves the Saints! I think he would be a great fill-in for Sean, and I really think he would be ok with the one year thing. I would love to see Chuckie come in and wear the NFC South out! Just paint 'em all black and gold!

Of course, he may not not want to give up his day job for a one year gig, and that's all that I would want him for. I am not about giving up Payton, no way no how.
Gruden would be excellent he is a good motivator. Don't need him tinker with anything just motivate and manage the game.

He even made mention during an interview with Payton how exciting it would be to coach a player like Brees and the Saints offense... hmmm.
