Reflection comes with lots of free time
3 slices bacon
1 tablespoon butter
1/2 cup onion
1/2 cup celery
1/2 cup green onion , chopped
1 1/2 cups shrimp stock
1 (15 1/4 ounce) can corn , drained
1 (14 3/4 ounce) can creamed corn
1 large potato , diced and cooked
1 lb crawfish tail , cooked and peeled
1/2-1 lb shrimp , cooked and shelled (optional)
2 cups heavy whipping cream
1 teaspoon creole seasoning
1/2 teaspoon salt
1/2 teaspoon butter
1/8 teaspoon cayenne
fresh parsley
Directions:
1Cook the bacon in a frying pan; drain on paper towels and crumble when cooled slightly. 2Put the bacon grease in a dutch oven. 3Add in the butter, onions, celery and green onion; saute until soft. 4Add the shrimp stock, corn and potatoes. 5Bring to a boil and then simmer until the potatoes are tender. 6Add in the crawfish (and shrimp is using). 7Simmer until heated through. 8Add in the whipping cream and seasonings. 9Simmer about 10 minutes for the flavors to meld. 10Just before you get ready to serve, add in the butter, cayenne and parsley. 11Ladle into bowls and sprinkle each serving with the crumbled bacon.

You are not alone in your feelings. While I feel like you do; I make myself remember how good of a team we have now. Pre 2006; I don't have to wonder "If" we are going to have a good team this year. Let me get something off my chest... I HATE LOSING (Period). With that said; this Saints team no longer makes me wonder "If" we are going to have a good year. I know we are. The only "IF" now; is, do I cook Crawfish Chowder or Red Beans "IF" we go to the Super Bowl this year. For me, that's a good "IF" to ponder every year.Posted 01-23-2012 at 03:26 PM by SapperSaint -

Think we're a player or 2 from seeing real results on defense. We need a stud d-lineman and at least 1 new linebacker. May also need to add a veteran corner.

Yeah, hopefully he'll get more out of our defensive "stars" and bring in one guy who will give the defense a boost in attitude as well as some energy. I don't even know how much we lost this year with the lack of takeaways. But those are more than just an additional possession. They give momentum which is worth much more than the extra drive. It stung for me too, but that soon will pass. It all ended for me when we hired Spagnoulo as defensive coordinator. That gave me tons of hope an excitement for the upcoming season.Posted 01-23-2012 at 12:17 PM by Halo
