Well, they do try to do that with the one-on-one interviews and team visits, and I'm sure there is a wide difference between how successful the precise methods teams use are, but nevertheless team try to gauge players' psyche.

Mock drafts are nearly worthless because there are so many variables that have to be accurately accounted for just to be able to accurately predict what is available much less who your team picks.

"If" your team has the first pick in a mock draft then you have a reasonable shot of getting that pick correct. The next 31 picks are riddled with more variables than a human can accurately simulate.

For pick #2 in the above first round you need to be able to accurately predict whether the team is going to pick a need, want, BPA, or a pick for trade leverage. Good luck with that.

Same thing for pick 3 in that first round. Except ill add a twist that was not in the previous pick. Do they trade down? Who makes this pick?

It compounds. Picking who your team will chose of the available players is not the most difficult action, its picking what is going to be available at those picks that is monstrously difficult.
