Recepie and ingredients are easy. The work and other things involved... not so much. If you have a stainless sink butter it before you put the popcorn in and start boiling your syrup, you will also need to butter your hands before you start, and lay out a sheet of wax or parchment paper to set them on. I tried gloves and they just make a bigger mess. Pop your corn and put it in your buttered sink or stainless bowl, magna-lite pot works well also but you will need a large one. You will need a candy thermometer as the drizzleing in cold water to make sure you have the "soft/hard crack" take a little practice. If you don't boil it hot enough they stay sticky and gooey and the popcorn balls do not maintain their shape when they cool. I suggest 290f for your boil. https://www.exploratorium.edu/cookin...ar-stages.html Once your syrup hits the desired temp, add butter to the pot , stir a little then pour over the popcorn. After you have emptied your syrup pot onto the popcorn, start stiring with a big spoon until it starts to cool enough for you to form the balls. Touch the top and make sure it isn't too hot to burn you then start making the popcorn balls from the top down. After the popcorn balls have cooled you can wrap them in cling wrap to prevent them from going stale or put them in the freezer. There are some youtube videos out there that may help you. |
