That is a classic textbook French method of cooking that created fantastic results. More even heat distribution plus once covered it kind of braises in its own juices. I do steaks the same way a lot. It's an especially good method for thick cuts of fish like mahi or bigger snapper. Crank the heat up on the pan till the butter or oil is almost smoking and get a nice golden sear on it. Flip it over and finish in hot oven. I have not tried burgers that way but it makes total sense.

Bottom Line, Swamp Room, Port of Call, The Alibi, Rivershack. The Alibi is on Iberville one block off Bourbon, it is open 24 hrs, is a little shady as many local strippers tend to party there when they are off and their cheeseburger is great. Most popular is Port of Call on Esplanade. Swamp Room on Vets burger may be the best in NO and surely the biggest. Bottom Line was my favorite NO cheeseburger but they now close at like midnight. i used to go there late but I assume its the same burger. Bottom Line is near Fat City. Rivershack has an awesome atmosphere, great food/cheeseburger and is on River Road in Metairie.

On Monday N'Tinis sells their cheeseburger and fries for like 7 or 8 bucks. This is a nice restaraunt and usually a little pricey but thats a great deal. I miss living in Mandeville.
