I've always liked the appearance of Vizslas myself, but have never really considered owning one because the breed just doesn't suit my lifestyle or personality.
Are Viszlas a retrieving breed or are they more of a jack-of-all-trades? It's certainly great that you can have him partake in as demanding of an activity as pheasant hunting and I imagine that goes a long way in making him a stable dog in your home environment.
My Toller would probably love to go duck hunting, but I don't hunt, so that's something that I can't give him even though I'd like to. We do other stuff to compensate both physically and mentally, so he is a very stable dog even at his current young age. Although his playfulness and need to be played with is something pretty exhausting after you've already tired yourself out with him at outside activities.
If I were to get another dog at the moment, I'd probably get a black & tan Hovawart, because it's a bigger dog breed than the Toller, they're one of the healthier big breeds, and they look a lot like Rottweilers - since I can't really bare myself to get another Rotty, so it could be a nice compromise. Also, they tend to be a lower energy breed than the Tollers, so the Toller would probably get along with the Hovawart quite nicely. Although, my better half has started to talk about having kids, so another dog might not be in the cards for me for a long long time.
