Pitch and catch is nice. No better than a school yard recess play. Say what y’all want but put a half padded defensive back in the face of that receiver and a QB stepping up to pressure from a Cam Jordan throwing it into coverage, now that’s my way of getting it down pat.

OTA's were once known as "passing camps" because the purpose was to get QB's and receivers in sync. You can still have pressures on both ends but there's not contact in those voluntary activities anyway. What you are talking about comes in the mandatory practices where the players are planning on being present when the first hints of contact occur.
