Payton may have had the Saints staff using excel spreadsheets or some sort to store player info while some other teams are using SQL databases with more easily defined query capabilities. It sounded like something along those lines when he was quoted as saying "we weren't as far ahead" when it came to "being able to pick up and access the information as quickly."

Yup. The Broncos previous coach, Nathaniel Hackett, is basically a generation younger than Payton. It's not surprising he would be using more up-to-date information retrieval methods.
