I have a program that plays video. It lets you pause and advance frame by frame. You can capture each frame as a JPG. Then I use Photo scape to convert them into an animated gif. It's easy but it takes a lot of patience.

And of course you have to have the game vid. I download Torrents of the game. Takes a lot of hard drive space.

By the way the program I use is VLC. It's a free download and one of the best media players out there. Even if you aren't going to do gifs you should DL it. Beats the hell out of Windows Media player.

Then I use Photoscape for putting the gifs together. It's also free.
