It might work against a weaker OL at times. That's a lot of weight given up so the 3rd DE would have to have uncommon power or speed. There is a reason why this is rarely done.
I wouldn't call it unconventional, the formations are usually the same just that you put more speed on the field. Cam Jordan at 3-tech for example. If a guard has to block him alone that's a pretty tough assignment.
