One is a seasoned career waiter, the other is a 20 year old stoner who has a hard time coming in with his shoes tied much less pronouncing half the items on my menu. I praise the seasoned guy when he sells a $200 bottle of wine. I praise the stoner when he makes it out of the kitchen without dropping a bowl of soup down an old ladies bra. The seasoned guy will take the lead for all the high dollar clients, and the stoner I will probably wind up firing or demoting him to bus boy and keep him on part time so I have someone to fill in when we are really busy and I need an extra hand.
You can fire the stoner and hire me. I'm a seasoned career waiter and I need a job!

I could never work in food service... well, not for very long.

I'd pour a bowl of soup on a rude patron in a New York second. Book it.

There is no such thing as 'upside'. You either play to your potential or you don't.

Exactly, that's why when we draft guys in Rounds 1-3 and you have to wait till their last year of their rookie contract to start or "rotate" it drives me nutz...

Either you can play or not...

Sure there is. A raw rookie needs time to develop. His measurables may be excellent but his knowledge of the game needs refining. Therefore the term "upside".
