Chicken and lamb Gyros, Greek roasted potatoes (frickin' awesome), and air fried zucchini.

What do you coat the zucchini with? I’ve not had luck air frying it.

I cut it in strips depending upon the size. Then halved. Perhaps eight to 12 pieces per zucchini. I coat first with seasoned flour. Dip in a wash of milk or buttermilk and egg. Then coat with panko. I use Italian seasoned. Spray basket with oil, and then the breaded zucchini. I use a heated fryer at 390 for 10 minutes and turn spray more if needed and go until it's well browned.

Cool. i’ve tried a similar recipe, but it hasn’t worked well in the air fryer.

Gonna try and beat the pack at their own game today. Grilled Bockwurst with sautéed onions and baked beans for today’s game. Geaux Saints.

We’re doing fried shrimp and catfish with some potato salad and boiled corn

Re: What’s on the menu!

Ribs, burgers, dogs, grilled corn, potato salad, and San Diego style rolled tacos.

Re: What’s on the menu!

Vegetable beef soup with leftover pot roast from yesterday. I don't want to be cooking during the game later. Probably do jalapeno cornbread sticks, too.

I had a Gyro from this place is Slidell yesterday, one of the best I’ve ever had.

When we went to Greece for my wife's 50th my wish list was lamb street gyros, a lambskin leather jacket, and an authentic Greek fisherman's cap. Got them all and twice on the Gyros.

Doing tacos, as well. Along with some cheese enchiladas, rice, and refried beans.

Nice.

My daughter has volleyball practice in 30 minutes so unfortunately it will have to be something quick/fast food ... probably a salad from ChikFilA.

Unfortunately :(.

I don’t think there’s a Chik-fil-a within 300 miles of me. I’d love a sammich!

I thought the "sammich" was from Popeye's. Never had one. We rarely eat out. I cook every meal. Other than special occasions. And even then some of those.

I miss In-n-out burgers saintfan. It’s probably a good thing for my health that they aren’t out this way.

They marinade their chicken in pickle juice. That's the secret to Chick-fil-A. You can do it from home!

Meh. For me they've always just been Okay. I do crave that double double every now and then tho, and my lady friend digs their fries, but she's from CA so I can't correct her error. LOL

I really miss Nations too.

Since it worked against the Pac when I had Green Bay food on game day I gotta keep the trend. I was thinking pulled pork sandwiches for Carolina. Any thoughts ?

Re: What’s on the menu!

I blame myself everyone. I did not do Carolina food for the game. I went to a tailgate party with hamburgers and sausages. If I’d have had done pulled pork we’d have won.

Re: What’s on the menu!

JP's Spaghetti for Stuffed Spaghetti
  • First, on med heat, browned Mild Italian Ground Pork Sausage with Garlic, Onion, Basil, Marjoram, Oregano, Rosemary, Sage, Thyme - Set aside in Dutch Oven...

  • Second, browned some One (1) inch pork meatballs with same seasonings as previous step - Drained, set aside in Dutch Oven...

  • Third, lika da meatball, so repeat Step 2...

  • Fourth, deglazed browning skillet with some Pinot Grigio, pouring reduced over ground sausage and meatballs in Dutch Oven...

  • Fifth, the sauce, warmed on Med-Low heat tomato sauce with same seasoning combination as above along with some sea salt, pepper, and turbinado...

  • Sixth, combined tomato sauce, ground pork sausage, and meatballs, all in Dutch Oven at 180°F, stirring regularly so as not to allow the bottom to scorch the sauce...

  • Seventh, in 10qt sauce pot, spring water with sea salt and olive oil, brought to rolling boil, added Angel Hair Pasta; done in less than 5 minutes, if that...

  • Eighth, drain pasta well; then over medium heat olive oil in browning skillet, add parsley and reduce with just a little bit of Pinot Grigio...

  • Nine, combine pasta with sauce, mix easy so as not to compromise meatballs, but enough so as to get a consistent mix...

Garnished with a side salad and garlic toast...

Now how do you make Stuffed Spaghetti?
  • Ten...split garlic pita bread into two halves, lightly coat with LOL Butter with Olive Oil and with some powdered garlic, lightly toast in skillet...

  • Eleven...stuff spaghetti sauce/meatballs/pasta into pita halves and stand upright onto a oven able taco shell stand, top with Mozzarella and Fresh Parmesan...

  • Twelve...place in 425°F Oven, till cheese to melts, browns (may use toaster feature to accomplish this); drizzle a lil' sauce, grated parmesan when serving...

No sir. It's my fault. I held a Saints party hoping jp would show and I was too busy to focus on the game. It's obvious that the team needed my good vibes and mojo. My bad.

Oh, man, here we geaux...

Without going into too much detail, saw my Doc today! While there's some damage, internal infection, I'll keep my leg!

Sean Payton will have to put me on IR for the year though, but I'll make a full recovery in 4-6 months...

I was on IV antibiotics for a month recently because of an infection. Infections sure do make you feel like crap! Get better soon my friend. The Saints need you. Maybe Sean will have you back for the Superbowl.
