So. What's on the menu this week?



Not a meal, but I'll be making cranberry jalapeno jam this weekend. Spread on a cracker with cream cheese... it's pretty right on.

That sounds really good ice. I’ve had sweet jalapeño with cream cheese before. Cranberry is probably nice. Let me know how it turns out (and send me a jar!).

My wife and I make this and blueberry jam every year. This is the time of year that friends and family call and text for some.

Ha Ha ! No, actually I’m not a guy who enjoys heavy heat in his food. I know jalapeños are not even a very spicy pepper, but I don’t eat them much. I don’t like them on nachos. The jelly with the cream cheese is about my perfect mix. I also like a spicy/sweet mustard with a bratwurst.

We stay warm with fireplaces. But once it gets cold we aren’t really warm again until next May.

About to fire up the Pit Boss in about 2 hours(midnight here). Gonna slap a brisket in there. 6 hours later, two chickens are gonna join it.
I made a Chicken, sausage and Shrimp Gumbo game one. I’ll try that again to help get our mojo back.

Pastrami, corned beef, pizza, cheesecake. But they play in New Jersey. Hot dogs, sloppy joes, hoagies.

I’ve done this more off than on for years…I theme my game time meal to our weekly opponent. So far this year I’ve done…
Week 1 Green Bay
Bratwurst poor boy with caramelized sweet onions and German potato salad.
Week 2 Carolina
Pulled pork poor boy with Carolina mustard based BBQ sauce and coleslaw
Week 3 New England
Lobster salad on French with buttered potatoes seasoned with Old Bay.
Week 4 New York Giants
Nathan’s Famous Coney Island hot dogs on bun and salt & pepper kettle chips.

Will add to this as the season goes on…

I'm envious of talented cooks. I'm not one of them but my girl says I'm a very creative cook for a bachelor. When I was in college I worked on a tug boat and the deck hand also cooks. The first morning I brought my captain steak and eggs. He was excited. Three meals later after only serving steak he said take it back and cook something different! I called my mom on the marine radio and she gave me directions for several meals. My mom gave me a copy of Betty Crocker's cook book which I used for decades.

I'm going to my twin brothers house and his wife is making boneless chicken wings from cut up breasts. I don't know her recipe but it's awfully good.

Today I’m going with PolloTropical’s grilled chicken recipe. Some curry mustard and cilantro lime sauce. Also, brisket burgers, potato salad and baked beans.

I do a weird trick with my sandwiches sometimes (like tonight). I make the sandwich, then wrap it in foil and then a plastic bag and refrigerate it for a while. It lets the bread soak the flavors and get the texture I like. Sounds crazy maybe, but it works for me.

On Mondays, if Saints won night before, I'll have a ribeye; and if they lost, it's Red Beans and Rice with Cornbread - either way, I win...

It's something we have been doing lately. Wife and I both enjoy it and we have plenty of leftovers.

Also, something I can throw in a container and bring to my parents. They enjoy just about anything they don't have to cook themselves.

Same. Don't do potato salad in it.

But, I also make a chicken, gator sausage, gator meat, and cactus gumbo with a central American twist using habaneros, and jalapenos, along with the usual trilogy, and with cilantro and cumin. The cactus has the same thickening qualities as okra or file'.

It's kick ass.
