Desperate for Gumbo. HELP!!!
Hey y'all!
I normally wouldn't post here but I'm in a bind. Its a tradition in my family that my Daddy always made a kickass Seafood Gumbo for the New Year. Well, pop passed away a few years ago, but left me the recipe. My bind is that I lost the recipe! Hook a brother up with your very best sources and/ or recipes for Gumbo! Do the Bayou proud!!! well here ya go, this should help ya out a lil...you can make the roux however u like, this one is made with flour, but u can use file or whatever. This one doesnt have okra cuz me and the family hate okra, but here we go.....
Every recipe is about taste, so yer gunna have to adjust some of the quantities according to you and make it your own..... 1 onion couple sticks of celery couple pods of garlic (be careful with this) 5 catfish filets for stock (adjust for how many people) 1 pound of peeled shrimp bout a 1/4 quart flour for roux little bit of green onions a bell pepper 3/4 pound or so of crab meat 1/4 quart oil some hot water and some cayenne pepper Chop all the greens and veggies, and set aside. Simmer catfish filets for bout10-15 mins, then strain with cheesecloth or whatever u got, keep the liquid and chop the catfish into 2 inch cubes. In da gumbo pot, add the flour and oil to make the roux, be careful, dont burn it. On about med high til it looks like peanut butter. Add all seasonings except green onions. Saute for a couple minutes. Add fish stock and catfish cubes. Add hot water, by the ladle, according to the thinkness u prefer. Add the crab and half the shrimp. Simmer for about 30-45 mins, stirring occasionaly. Add rest of shrimp and green onions and cook about 10-15 mins longer. Add salt, pepper and cayenne to taste. And of course throw some rice with it! here ya go, hope it helps and comes out alright..... |

wow.. you guys use recipes to cook gumbo... dude... just throw all ya stuff in ya pot after makin the roux and your good to go...

Tip: Don't add your onions, peppers until the last 30 minutes of cooking, this way they won't lose they're flavor from over cooking them, add a few pieces of smoked meat along with chicken, I love adding smoked turkey wings, gives you a lot of extra flavor.
When we cook gumbo we cook enough to freeze so we have an easy meal the next time we're hungry for gumbo.. Sometimes I add a small pack of dried shrimp to give it a little kick.. Well, I guess I get a pot of gumbo going now, all of a sudden I'm in the mood for some.. |

Add more Shrimps.....you can never have too much shrimps. I lived in CT for 2 years way back when and used lobster because it was cheaper than shrimp.

If you can find it, add andouille sausage to the gumbo. Pan fry it prior to adding it to the gumbo.
