If the 49ers water down the field doesn't it affect them as well? It doesn't make much sense to me.

Well the common understanding is that a muddy field would actually be more harmful to the team with the better run offense, so it's hard to say, but stat-wise NO were #6 in yards per game rushing and SF were #8 - so going by numbers alone it would seem more harmful to NO.
