Hmm, I like him as WR/TE yeah, but I also like him as QB and option. I don't really like him as RB. I think most teams are ready for that.

Does Taysom ever actually get covered by a CB when he’s lined up as a WR? I genuinely don’t know but I’m guessing teams usually put a LB on him like a TE.

They are not there because they aren't measurable. You might be able to rate or grade but not measure, they aren't tangible. Nothing in that is subjective, it is raw data to draw a subjective conclusion from.
