this is a discussion within the Saints Community Forum; Just ate black bear sausage infused with beef, jalapeño and cheddar. I'm not a big fan of bear but with the right ingredients you can make almost anything taste good....

Re: What’s on the menu!
Never had the opportunity to try bear. I know it has to be cooked well so I'd imagine other than a sausage a stew might be good. I've read the meat is slightly sweet. Is that true?

Re: What’s on the menu!
Just made a batch of my famous Infierno Verde (Green Hell) Salsa. Wow! Used Carolina Reaper that my neighbor gave me. Usually use habanero. I am sweating just breathing it. Going with fish tacos tonight.

Re: What’s on the menu!
One of the funniest things I’ve ever seen was to watch a coworker of mine try to eat a spicy sausage at a hot dog shop that made their own back in Napa, CA.
Im not that into heat (it does have its place) so I Don’t know what was in the sausage itself, but they had a Diablo Dog you could order that, if you could finish it, you got a Tshirt, name on the Wall plaque of fame (less than 20 folks). We went for a Friday Lunch and this guys goes for it. The looks on his face…the color changes…the sweat…. It was priceless. Too bad it was before the days of Smart phones or I’d have a classic video. Guy didn’t make it back to work. |
