It may be getting close to my making a batch of my Gator and Cactus Gumbo. It is a central American based recipe fused with the basis of a chicken and sausage gumbo. Cactus has much of the same thickening properties of okra with a different flavor. I use an enhanced version of the trilogy with jalapenos, habaneros, and poblanos replacing the traditional peppers.
I got the signoff on my early concept from Chef Amy Sins in New Orleans of Langlois years ago. I ran it by her and she said "absolutely". She suggested a sausage component of chorizo which I used in a minor degree. More story to follow. Duh! Making supper. Sorry, later. |

Tonight I'm having a beef roast cooked in a crock pot all day at a low temperature seasoned with Cajun seasonings. One of the sides will be green beans. I've been craving them ever since we covered them earlier in this this thread. I'm also having garlic roasted red potatoes slightly cooked but browned. I've cut out dessert to lose my Covid weight from over eating because of boredom and the gym being closed so I'll just have more roast instead. My twin brother is coming over and always eats good here.
