Just ate black bear sausage infused with beef, jalapeño and cheddar. I'm not a big fan of bear but with the right ingredients you can make almost anything taste good.

Never had the opportunity to try bear. I know it has to be cooked well so I'd imagine other than a sausage a stew might be good. I've read the meat is slightly sweet. Is that true?
