My wife made homemade beef stew while I was at the hospital ... if the Saints play as good as this tastes we'll be in good shape!

Put it this way, about 6am my terrier took off after both a cat and a possum this morning and he doesn't like the cold...

Started the stew at noon, brown the beef and deglazed with red wine, that lil MoFo came cruising back in once the smell hit that cool air and carried...

And it is great - peas, carrots, hash-browned potatoes, lima beans, in a light, flavourful au jus roux; missing eating this with my Grandma when GulfPort turned chilly...

Once made this for my friends in Mass (Wellesley); they half-heartedly felt guilty as I ended up cooking every night - and I didn't mind one bit...

Sounds beautiful ! I’ve never tried the hash brown potato idea. Mind if I borrow it?

Hell, no - By all means; cuts down on the starch bleeding out into the beef stew, helps the taters freeze better when you put some stew away for later...

That makes total sense! The taters are always the worst part of reheating frozen stew.

JP after reading your post I do have one question, did the cat or possum wind up in you stew?
