Red beans and rice today and probably red beans and rice tomorrow. A crockpot in a motel room does wonders, has for many years working on the road.

Take your burnt ends (or chopped brisket), roasted potatoes, crumbled bacon, roasted garlic, collard greens, and basically anything else you want and toss it together. Put it all in a hot cast iron skillet and throw it in the oven until the top gets crispy. Pull it out, put your favorite sauce on top and dig in.
I like to crack a few eggs on top at the last minute and put it under the broiler. I like the yolks runny but you can cook it hard if you want.

Were you stationed in Germany? When we lived there you could order that in restaurants. That brought back memories of the Black Forest.
