Just finished dressing the Boudin King Cake fresh out of the oven. Stuffed with spicy boudin from Bergeron’s here in Bossier and Pepper Jack. Topped with hot pepper jelly glaze, bacon crumbles, and green onion sprinkles.

There is a place called Tam’s cuisine In Pacifica California. They make possibly the best eggrolls in the world in my opinion. My wife just came back from a weeklong stay in San Francisco and she brought me back $100 worth of their egg rolls on the plane. Needless to say I’m having eggrolls for dinner tonight...that’s what’s on the menu!

Trying a Carne Asada recipe. Got the flank steak marinating overnight and gonna get it on the grill tomorrow. Fingers crossed.

Sounds good! I've had a brisket soaking in a red wine marinade, with lots of spices, onions, and peppers slow cooking on the smoker for street tacos. Started it last night. It's falling apart and I've been sneaking strips all afternoon. Got black bean soup with tasso in a pot and just finished up a batch Mexican rice.

It wasn't bad. Had a good flavor that was there but not overpowering.

Didn't realize how much flank steak costs. But, I guess everything is expensive right now.

How much did it run? I get flank quite often for tacos al carbon. Usually around $9 a pound. Kroger's meat counter. I guess it's been about a month since I got any, though.

That's about what I paid. I guess that's right then. It's not something I usually get.

The recipe called for flank, flap, or skirt steak. Didn't even see the other two in the store.

Hardly ever see flap. With flank the grain runs the length of the cut while it runs across the length with skirt. Flank is leaner, yet more tender, but skirt seems to have more flavor.

I got in a discussion with my cousin about grills a while back. We both kept trying to one up each other by sending links to different bad ass grills. I saw this bad boy and just had to have one. Then I saw the price tag. I have some welding experience so I decided to go ahead and make one. It turned out great and I’ve already done one pig on it. A buddy of mine trapped a bunch of wild hogs last night so he’s going to bring me a couple. I may try the Asado cross this time.

Here are the crosses. I made a few of these but so far I’ve only done chicken and salmon.

Just had piece of Pecan Pie. Speaking of Pecan pie, a friend just texted me a pic of his kid and wife with...Drew Brees in Park city Utah. They went away for the weekend and bumped into him on the street.

The pie was really good.

Wasn't yesterday national Pi day? Nice coincidence Boston. I had homemade apple pie. However, I sure do love pecan pie(pronounced PE Can by my uncle), which is my all time favorite pie.:bugeyes:

i’m not going to lie. I’m almost as excited about this re-signing as I was when I first heard we signed Drew Brees (I was in a hot tub in Tahiti when that happened…but that is another story!). I think there are very good things to come for us. Winston has matured and has a chip on his shoulder. So does CGM.

In celebration I am going to throw a cowboy steak on the grill with a potato and corn! LETS GO SAINTS!!!

Six days on a restricted (unnecesssary, Doc protecting her arse) diet, get D/C'd, and my buddy stops and gets shrimp PoBoys bring me home...

There were twice as many local shrimp on it, but started picking on the way home; nothing like seafood in South Louisiana on a Lenten Friday...

Happy Easter all! Having a family get together with gumbo, Baked ham, beans, scalloped potatoes and lots of salads. Only good thing about a funeral is it brings family together to heal.

Here's the 14 pound brisket that I put on the smoker at 8:30 last night. Wrapped it at 4:00 AM when it hit 165 degrees. It's finished (205 degrees) and resting until we break into it later.
