French pate, and sorted dry sausage cold cuts, sorted cheeses, crackers with sesame seeds, chips for the salsa, home made salsa, grapes, mini quiches, madeleines, and of course sorted French wines. Hosting a French wine tasting GTG.

Starting the process to make my gumbo. Wife and I got invited to a July 3rd party and I’ve been asked/begged by neighborhood to make a big batch for the potluck soirée! Just got back from the store. Got some chopping to do.

Was waiting in line for tacos yesterday in Boston and a guy steps in behind me with an LSU shirt on. I gave him a “Geaux Tigers” and he smiled and said “Who dat” since I had my Saints hat on. We chatted for a few while waiting. He’s from Alexandria and is excited about the Saints draft picks. He was in town to watch the Red Sox/Yankees series (big deal up here) so we talked more baseball than Saints.

It always pleases me to hear the home area accent (I’ve lost most of mine over the decades) and chat with friendly southern people. I Had 2 excellent Chicken Tinga and 2 Fried shrimp tacos !

Ground chuck and Italian sausage meatloaf made with a sofritto of minced carrots, onions, celery, and garlic tonight cooked on the pellet smoker.

First time trying it this way. It should work out fine. Always looking for new ways to use the smoker. I used a peppercorn BBQ sauce instead of ketchup in and on the meatloaf and kicked up the meat with some cayenne and Tabasco. Going to steam some broccoli and toss with an olive oil, garlic, and lemon juice mix. Mash potatoes and yeast rolls should help satisfy the starch addiction that appears to afflict us of Irish ancestry.

Fixed some black drum laced with some Paul Prudhomme spices yesterday. Stuffed portobello mushrooms with goat cheese and grilled asparagus.

Until covid hit I had an annual steak party after the Mobile rugby tournament where we served up over one hundred ribeyes. The only good thing about covid was that I could step away from the rigors and expense of the steak party.

Hey Gang. Getting ready to enjoy some local fresh fish from Mo’orea, French Polynesia. I’m here Celebrating my 20th anniversary married (Hope my wife is doing well 😜). I’m representing the B&G and had someone shout “Who Dat!” when they saw my hat! Turns out it was a lady from NO and her daughter currently enrolled at LSU.
