I was on IV antibiotics for a month recently because of an infection. Infections sure do make you feel like crap! Get better soon my friend. The Saints need you. Maybe Sean will have you back for the Superbowl.

JP's Spaghetti for Stuffed Spaghetti
  • First, on med heat, browned Mild Italian Ground Pork Sausage with Garlic, Onion, Basil, Marjoram, Oregano, Rosemary, Sage, Thyme - Set aside in Dutch Oven...

  • Second, browned some One (1) inch pork meatballs with same seasonings as previous step - Drained, set aside in Dutch Oven...

  • Third, lika da meatball, so repeat Step 2...

  • Fourth, deglazed browning skillet with some Pinot Grigio, pouring reduced over ground sausage and meatballs in Dutch Oven...

  • Fifth, the sauce, warmed on Med-Low heat tomato sauce with same seasoning combination as above along with some sea salt, pepper, and turbinado...

  • Sixth, combined tomato sauce, ground pork sausage, and meatballs, all in Dutch Oven at 180°F, stirring regularly so as not to allow the bottom to scorch the sauce...

  • Seventh, in 10qt sauce pot, spring water with sea salt and olive oil, brought to rolling boil, added Angel Hair Pasta; done in less than 5 minutes, if that...

  • Eighth, drain pasta well; then over medium heat olive oil in browning skillet, add parsley and reduce with just a little bit of Pinot Grigio...

  • Nine, combine pasta with sauce, mix easy so as not to compromise meatballs, but enough so as to get a consistent mix...

Garnished with a side salad and garlic toast...


Now how do you make Stuffed Spaghetti?
  • Ten...split garlic pita bread into two halves, lightly coat with LOL Butter with Olive Oil and with some powdered garlic, lightly toast in skillet...

  • Eleven...stuff spaghetti sauce/meatballs/pasta into pita halves and stand upright onto a oven able taco shell stand, top with Mozzarella and Fresh Parmesan...

  • Twelve...place in 425°F Oven, till cheese to melts, browns (may use toaster feature to accomplish this); drizzle a lil' sauce, grated parmesan when serving...

It's not that my way is the right way, I just make the right way my way...

So. What's on the menu this week?



Not a meal, but I'll be making cranberry jalapeno jam this weekend. Spread on a cracker with cream cheese... it's pretty right on.

That sounds really good ice. I’ve had sweet jalapeño with cream cheese before. Cranberry is probably nice. Let me know how it turns out (and send me a jar!).

My wife and I make this and blueberry jam every year. This is the time of year that friends and family call and text for some.

Ha Ha ! No, actually I’m not a guy who enjoys heavy heat in his food. I know jalapeños are not even a very spicy pepper, but I don’t eat them much. I don’t like them on nachos. The jelly with the cream cheese is about my perfect mix. I also like a spicy/sweet mustard with a bratwurst.

We stay warm with fireplaces. But once it gets cold we aren’t really warm again until next May.
